Created by Lavazza in homage to Australia’s passion for coffee, Mosaic is an artful fusion of our coffee blending expertise with fresh insights from Australian artists and coffee experts, to inspire our new portfolio.
Like a mosaic, we have pieced these insights together to develop a range of blends that are greater than the sum of their parts, and perfectly suited to Australian coffee lovers.
Developing the Mosaic blends
Crafted for Australian cafes
Our Lavazza coffee experts Nick and Peter drew on their personal expertise and inspiration from Australian artists and coffee culture to create three unique blends and a pipeline of rotating single origins.
After extensive research, flavour experimentation and tasting close to 100 Australian coffee blends and single origins from around the world over an 18-month period, Nick and Peter identified key flavour profiles preferred by the Australian coffee drinker: low bitterness, nutty flavours, and chocolate notes.
Much like a mosaic, the duo sought out each individual piece of the puzzle, bringing them together to form a bespoke range of blends tailored to the Australian coffee drinker.

Nick Ferrara & Peter Dorkota
Coffee Experts, Lavazza
Nick and Peter are passionate coffee experts who share a vision for crafting exceptional coffee experiences. With a deep-rooted appreciation for the art and science of coffee roasting, brewing, and flavour profiling, they have dedicated their careers to mastering the craft of coffee.
Drawing on their personal expertise and inspired by Lavazza’s 130-year heritage in coffee making, Nick and Peter have created three unique blends that combine rigorous testing with inspiration from the Australian artists and coffee makers they partnered with.
Daimon Downey
Designer, Artist
Daimon Downey, a Sydney-based contemporary artist, channels his vibrant energy into abstract and expressionist artworks characterised by bold colours and rooted in imagination.
Daimon has created original artwork for the Mosaic range, drawing inspiration from the principles of mosaic art and incorporating iconic silhouettes of Australia’s landscapes. This collaboration aims to forge a connection between Australia’s diverse terrains and its rich coffee culture.
Daimon remarks how a mosaic is the sum of many parts, which is reflected in his collage method used for the project. From the red dirt of the desert, the flora of Australian rainforests and the coastal views of his Bondi studio, Daimon has physically pieced together each collage to reflect each bespoke blend of the Mosaic range.
Pana Barbounis
Chocolatier, Pana Organic
Pana, founder of Pana Organic, is dedicated to crafting indulgent treats that nourish the body and soul. In response to Australia’s growing alternative dairy market, Pana has paved the way for vegan chocolate that is not only delicious but accessible to everyone.
Like Mosaic, he tailors his creations to suit the evolving Australian palate and demonstrates a dedication to sourcing quality raw ingredients. His passion for flavour creation and commitment to quality result in unique and delicious chocolate products, with a spot on the shelves of Australia’s major supermarkets.
Pana has inputted into the flavour development of Mosaic to bring out the chocolate, nutty and biscuity flavours, especially when paired with milk. We are also co-creating a vegan chocolate powder perfectly suited to the Mosaic range.
Carlie Dyer
Blender, Starward Whisky
As a blender at Starward Whisky, Carlie expertly navigates the intricate world of flavour development. With a background in winemaking, Carlie’s approach to whisky blending focuses on balance, complexity, and building aroma.
We worked with Carlie to understand how she blends ‘New World Whiskeys’ for Australian consumers by using innovative techniques involving the use of beer barley and red wine barrels for sweeter, fruit-forward whiskies.
While spending time with Carlie at the distillery, we learned about using gas chromatography, a process for flavour mapping that we have implemented across the Mosaic range. We are also partnering with Carlie on a limited-edition barrel aged single origin coffee.
